Fall Harvest Wahoo With Maple Herb Butter

🐟 Main Dish: Maple Herb Seared Wahoo

Ingredients

  • 2–3 fresh wahoo fillets

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 tsp sea salt

  • ½ tsp black pepper

  • ½ tsp smoked paprika

  • ½ tsp thyme

  • ½ tsp rosemary


🍁 Maple Herb Butter (Fall Flavor Bomb)

  • 2 tbsp softened butter

  • 1 tbsp pure maple syrup

  • ½ tsp fresh lemon zest

  • ½ tsp thyme

  • ½ tsp rosemary

  • Pinch of cinnamon (optional but very fall!)

  • Pinch of sea salt


Instructions

1. Make the Maple Herb Butter

Mix softened butter, maple syrup, lemon zest, thyme, rosemary, cinnamon, and sea salt.
Refrigerate until ready.

2. Season the Wahoo

Pat fillets dry.
Season with sea salt, pepper, paprika, thyme, and rosemary.

3. Sear the Wahoo

  • Heat olive oil + 1 tbsp butter in a skillet over medium-high.

  • Add wahoo fillets and cook 3–4 minutes per side.

  • Wahoo should be golden on the outside but still moist inside.

  • In the last minute of cooking, add a spoonful of maple herb butter to melt over the top.

4. Finish & Serve

Top with another small dollop of maple herb butter right before serving.

The warm maple + herb flavors pair beautifully with wahoo’s clean, mild taste and give it that cozy fall vibe.


🍠 Side 1: Roasted Sweet Potatoes With Brown Sugar & Cinnamon

Ingredients

  • 2 large sweet potatoes, cubed

  • 1 tbsp olive oil

  • 1 tbsp brown sugar

  • ½ tsp cinnamon

  • ½ tsp sea salt

Instructions

  1. Preheat oven to 425°F.

  2. Toss sweet potato cubes with olive oil, brown sugar, cinnamon, and salt.

  3. Bake 25–30 minutes, flipping once, until caramelized and tender.

These bring warm fall sweetness that complements the savory maple wahoo perfectly.


🧄 Side 2: Garlic Butter Green Beans

Ingredients

  • 1 lb fresh green beans

  • 1 tbsp butter

  • 2 cloves garlic, minced

  • Pinch of salt & pepper

Instructions

  1. Steam or boil green beans for 3–4 minutes until crisp-tender.

  2. Melt butter in a pan, add garlic, cook 30 seconds.

  3. Toss in green beans, salt, and pepper.

Light, bright, and balances the richer fall flavors.


🍽 Serving Suggestion

Plate the wahoo over a bed of roasted sweet potatoes with garlic green beans on the side.
Drizzle any leftover maple butter from the pan over the fillets.
