Windy weather? We love it. When the summer breeze rolls in, we break out the kites—kite fishing allows us to keep live bait right on the surface, mimicking struggling fish and triggering explosive strikes from apex predators.
Whether you’re new to offshore fishing or a seasoned angler, kite fishing is a thrilling and visual way to fish, and a technique that sets us apart from the average charter. You’ll actually see the fish explode on the bait, making for unforgettable moments.
🎯 Target Species: Kingfish, Sailfish, and Mahi-Mahi
On recent trips, we’ve been consistently hooking into big King Mackerel (Kingfish)—some pushing over 40 pounds! These hard-fighting fish are a blast to catch and make for fantastic eating.
We’re also catching acrobatic Sailfish and beautiful Mahi-Mahi (Dorado), especially around weed lines and floating debris. These pelagic predators offer fast-paced action and vibrant photo ops for your Instagram or family photo album.

🔥 Summer Grilled Kingfish with Citrus-Herb Marinade 🍋🌿
Serves 4 | Prep Time: 15 min | Cook Time: 10-12 min
Ingredients:

4 Kingfish steaks (about 1″ thick)

1/4 cup olive oil

Zest and juice of 1 lemon

Zest and juice of 1 orange

2 tbsp chopped fresh parsley

1 tbsp chopped fresh basil or dill

2 cloves garlic, minced

1 tsp Dijon mustard

1/2 tsp salt

1/4 tsp black pepper

Optional: chili flakes for heat
Instructions:

Make the marinade: In a bowl, whisk together olive oil, lemon zest/juice, orange zest/juice, parsley, basil, garlic, mustard, salt, and pepper.

Marinate the fish: Place Kingfish steaks in a resealable bag or shallow dish. Pour marinade over them and refrigerate for 30–60 minutes.

Preheat grill: Set to medium-high heat. Oil the grates to prevent sticking.

Grill the fish: Remove from marinade and grill steaks 4–6 minutes per side, or until the fish flakes easily with a fork and has a nice char.
