This afternoon, Wicked Cuda set off for another exciting Fort Lauderdale deep sea fishing trip, and the action did notdisappoint. We skipped trolling and went straight to live baiting with kites and flat lines β one of the most effective tactics for targeting pelagics in South Florida.
π― Instant Sailfish Action on the Kite
As soon as we got the baits in the water, the Atlantic sailfish showed up in force. Within minutes, we had our first double hookup. Over the next 90 minutes, we went 5-for-6 on sailfish, an incredible bite that had our anglers screaming with excitement.
π How We Handle and Release Sailfish
We take pride in our ethical fishing practices on Wicked Cuda. Once a sailfish is hooked, we carefully fight the fish using circle hooks to reduce harm. As the sailfish nears the boat:

The mate puts on gloves and gently bills the sailfish (grabs the fish by the long bill).

We keep the fish in the water boat-side to reduce stress and allow for quick photos β we never drag sailfish over the gunnel.

With the fish revived and kicking strong, we remove the hook or cut the leader cleanly at the hook and safely release the sailfish to swim away.

π Bonus Tuna & Bonita Action
In the chaos of multiple sailfish hookups, one of our flatlines lit up again β this time it was a very large blackfin tuna. The tuna peeled drag and dove deep, but we fought it cleanly and got it in the fish box. Later, a feisty bonita added to the action, testing out our light tackle.
π§βπ³ Easy Blackfin Tuna Poke Recipe
(Great for fresh Fort Lauderdale blackfin tuna!)
Ingredients:

1/2 lb fresh blackfin tuna (sashimi-grade), diced into 1/2-inch cubes

2 tbsp low-sodium soy sauce

1 tbsp sesame oil

1 tsp rice vinegar
-
1 tsp honey or agave
-
1/4 cup chopped green onions

1 tsp toasted sesame seeds

1/2 avocado, diced (optional)

1/4 cup diced cucumber (optional)

Crushed red pepper or sriracha (to taste)
Instructions:

In a bowl, mix soy sauce, sesame oil, rice vinegar, and honey until combined.

Add diced tuna and gently stir to coat.

Fold in green onions, sesame seeds, and any optional ingredients (avocado, cucumber).

Cover and refrigerate for 10β15 minutes to chill and marinate.

Serve over sushi rice, with seaweed salad, or in lettuce wraps. Garnish with extra sesame seeds or a drizzle of sriracha.
Chefβs tip: Always use freshly caught or flash-frozen tuna for poke. Blackfin tuna is mild, lean, and perfect for raw preparations.
